A quick, cheap and easy meal that you can have for breakfast, lunch or dinner. The mixture makes a lot, which are handy for left overs. Healthy, delicious, filling and my kids love them!
I can corn kernels
1 can creamed corn
1/2 cup sour cream or buttermilk
1 1/2 cups self raising flour
salt and pepper optional
Place all ingredients into mixing bowl and combine.
In a fry pan on medium heat, spray or sprinkle with oil and using a dessert spoon, dollop mixture and flatten until it's a bit thicker than a pancake and no bigger than a pikelet. You should be able to fit 3 in a normal size fry pan.
Brown on each side and then I finish cooking them in a pre-heated oven of 180 degrees celsius for about 5 minutes. They are quick to darken and burn and being a bit thicker they don't always cook properly all the way through.
Top with salsa or any topping you like or see below for my toppings
Rocket lettuce mix with a drizzle of oil and pinch of salt so it's not dry
Salsa - 2 jars of dorrito mild salsa, coriander, avocado diced, red onion thinly sliced
